In this article, we analyze guest reviews with NLP and compile a nationwide TOP 30 ranking of hotels and ryokan that draw the most mentions of egg dishes. We then examine just how rare an evaluation axis the “egg dish tag” is within each area, and use a scatter plot to quantitatively read how high marks for egg dishes correlate with overall guest satisfaction.

The first thing to grasp is how much egg-dish mentions are an evaluation axis you have to deliberately go after. According to HotelBank Editorial Team data, only about 0.8% of guest reviews nationwide positively mention egg dishes over the most recent three months (versus about 0.6% a year earlier). That is an order of magnitude smaller than buffet variety (about 9.0%) or breakfast value-for-money (about 3.1%), and the very fact that a review bothers to mention egg dishes is evidence that they left a strong impression.
Properties reaching 10 or more mentions numbered about 100 nationwide, spread across 32 prefectures. In other words, egg dishes are not the exclusive preserve of a few famous hotels; “hotels remembered for their eggs” are scattered across the country, including regional ryokan and business hotels. From guest reviews over the most recent 24 months, we compiled the TOP 30 in descending order of positive mentions of egg dishes. The top ranks mix properties with different serving styles — from city hotels touting “omelets cooked right in front of you” to ryokan winning support for tamago-kake-gohan or sweet tamagoyaki. Ark Hotel Okayama in Okayama tops the nation with 121 mentions. One guest wrote that “the freshly made buri-shabu and omelet… were especially delicious,” suggesting that egg dishes with a live, made-to-order feel translate into repeat praise.

Kyoritsu Resort Properties and Large City Hotels Also Rank High — A Diversity of Serving Styles
Taking in the ranking as a whole, the properties that win acclaim for egg dishes fall into two broad lineages. The first is the “live-kitchen” style of large city hotels and resorts. At Grand Nikko Tokyo Bay Maihama (Chiba) and Hotel Okura JR Huis Ten Bosch (Nagasaki), a station serving made-to-order omelets drives breakfast satisfaction. A review of the latter mentions “an omelet served freshly made,” clearly showing the added value of made-to-order serving.
The second is the “ingredient” style of ryokan and regional hotels. As represented by voices such as “the tamagoyaki was slightly sweet and delicious” at Fujinoya Yutei (Yamanashi) and “the tamago-kake-gohan is delicious” at Kaike Seaside Hotel Umi no Shiki (Tottori), the quality of local eggs themselves and Japanese-style egg dishes win support. Including resort properties operated by the Kyoritsu Maintenance group, this diverse lineup shows that egg dishes can become a differentiator regardless of scale or category.
What these properties have in common is that they combine the familiar ingredient of eggs with one of “live feel,” “local sourcing,” or “careful preparation” to create a memorable accent in the breakfast experience. Eggs are relatively easy to keep low in cost while contributing greatly to satisfaction, making this an area with large upside for breakfast branding.
Do Egg Dishes Alone Raise Satisfaction? A Quantitative Check via Scatter Plot
So, to what degree does a reputation for egg dishes lift a property’s overall satisfaction? For the top 29 properties in the egg-dish ranking, we created a scatter plot with the overall score on the horizontal axis and the breakfast score on the vertical axis. Most properties fall above the diagonal (dotted line) where “breakfast score > overall score,” showing that at properties known for egg dishes, breakfast pulls the property’s rating up beyond its overall level.

Quantitatively, among the top egg-dish properties the breakfast score exceeded the overall score by an average of +0.14 pt. By contrast, in a comparison control group whose egg-dish reputation does not stand out (40 hotels that draw guests by being near a station), the breakfast score fell below the overall score by an average of −0.28 pt — a gap of roughly 0.42 pt between the two. Furthermore, in the top egg-dish group the breakfast score exceeded the overall score at 55% of properties, versus just 30% in the control group. This confirms quantitatively that a single evaluation axis — egg dishes — has the potential to lift breakfast satisfaction.

Differentiating breakfast does not necessarily require a lavish number of dishes or high-cost ingredients.
